ingredients
- 2 sheet puff pastry, defrosted
- 6 ounce brie cheese
- 2 teaspoon fresh thyme
- 2 peaches, thinly sliced into half moons
- 1 egg
- honey, for serving
Method
Step 1
Thaw the puff pastry and cut into 8 squares.
Step 2
Wash the peaches, remove the pit, and cut into 1/4-inch slices. Slice brie into thin strips.
Step 3
Top each piece of puff pastry with brie and sprinkle with fresh thyme.
Step 4
Place sliced peaches on top.
Step 5
Fold the edges of the pastry inward and brush with a beaten egg.
Step 6
Bake for 15-20 minutes, or until the pastry is golden brown. Eat warm with honey and some more fresh thyme.
