A classic grilled cheese sandwich is perfectly toasted and buttered bread filled with Norwegian Gouda, it's a classic and notstaligic recipe for any cozy night in this Fall.

ingredients
- 2 slices of bread of choice
- 2 tablespoons butter
- 2 tablespoons mayonnaise
- 4 slices of Jarlsberg and/or Norvegia (if you can't find these Norwegian Gautaler cheeses, go for something close to Emmental or Gouda
Method
Step 1
Heat a non-stick pan to medium heat.
Step 2
Thinly spread butter to the edges one slice of bread. Add onto it the sliced cheese, so as to evenly cover the bread. Butter the second slice of bread just like the first one then close the sandwich, butter-face in.
Step 3
Generously spread mayonnaise to the edges of the top slice of the sandwich, and carefully flip it, mayo-face down, into the hot pan. Adjust the heat so that the bread sizzles gently and doesn't burn before the cheese has melted.
Step 4
Use a spatula to press down onto the sandwich, helping it to become crisp and compact. When the underside looks done, spread mayo on the top slice and flip the sandwich, pressing down again with the spatula.
Step 5
Once both sides are golden brown and the cheese has melted through, bring your sandwich onto a cutting board and slice by firmly pressing through its middle.
