Cottage cheese is having a moment right now, and I love to see it! I’m a big fan of eating cottage cheese with fruit on it for breakfast. However, many people take issue with the texture of cottage cheese. ENTER: whipped cottage cheese. By whipping the cottage cheese in a food processor or blender, it becomes smooth, creamy, and luscious. With my delicious whipped cottage cheese, I made an absolutely SCRUMPTIOUS fall-themed toast featuring caramelized apples and pumpkin seeds! The flavor combinations for the whipped cottage cheese are literally endless, so have fun!

ingredients
- 2 tablespoons butter
- 2 tablespoons brown sugar
- 2 apples, thinly sliced
- 1 teaspoon cinnamon
- 1 cup cottage cheese
- 2 slices crusty bread, toasted
- 2 tablespoons roasted & salted pumpkin seeds
Method
Step 1
Start by caramelizing the apples. In a large pan over medium high, melt the butter. Add in the brown sugar and mix. Add in the apple slices and cinnamon. Cook, stirring occasionally, until apples are very tender and caramelized, 15-20 minutes.
Step 2
Meanwhile, whip the cottage cheese. Add the cottage cheese to a food processor and mix until very smooth.
Step 3
Once apples are done, assemble the toasts. Pile on a thick layer of whipped cottage cheese, and top with the caramelized apples. Sprinkle on pumpkin seeds. Enjoy!
