Who doesn't love rice krispie treats? Ooey gooey marshmallows melted with butter makes for a magical combination.
Recipe Description
This recipe upgrades an already delicious dessert with the addition of homemade popcorn. Cook the popcorn in vegetable, coconut, or avocado oil in a pot on the stove.
Once the corn is popped, the butter & marshmallows are melted into a sticky, salty-sweet mixture that is tossed over the popcorn. Mix until clusters form, adding in mix-ins of your choice. We used dark chocolate and pretzels, but you could also add chopped dates, coconut, walnuts, or any other ingredients you desire.

What type of oil do you use for popping popcorn kernels?
In this recipe, we used vegetable oil. You can also use coconut oil, avocado oil, peanut oil, or a mixture of olive oil and butter. Using different oils will yield subtle variations in the flavor and texture of the popcorn.
How do I turn these into bars like rice krispie treats?
Press the mixture into a square-shaped tin, and let the marshmallow mixture cool at room temperature for 1-2 hours. Once cooled, slice into bars.

- 3 tablespoons vegetable oil
- 1/2 cup popcorn kernels
- Kosher salt
- 1/2 stick melted butter
- 1 bag marshmallows
- 1-2 cups pretzels, roughly broken up
- 1/2 cup dark chocolate chips
Method
Step 1
Heat vegetable oil in a large pot over medium-high. Add in 1 popcorn kernel and cover with a lid. When the 1 kernel pops, add in the rest of the popcorn kernels and cover with the lid. When the popping slows down/almost stops, remove the popcorn from the heat. Pour the popcorn out into a big bowl and season with kosher salt.
Step 2
In the same pot, melt the butter over medium heat and add in the marshmallows. Cook, stirring occasionally, until the marshmallows are melted. Then add the popcorn back in and stir to coat. Stir in the pretzels and remove the mixture from the heat.
Step 3
Pour the popcorn mixture into a large bowl and allow to cool slightly, then mix in the chocolate chips. Enjoy in delicious clusters, or shape into bar form.
