A Note from Feedfeed

A classic French rolled omelette is a staple in my kitchen! It takes a bit of practice to get the technique right, but once you master it, you'll be enjoying these creamy, fluffy eggs all the time. 

You can add cheese or whatever filling you want inside the omelette before you roll it, but if you are adding anything that should be cooked, I recommend cooking separately before adding to the omelette. Bon appetit!

ingredients

  • 2 large eggs
  • 1 tablespoon milk
  • kosher salt, to taste
  • 1 tablespoon unsalted butter

Method

  • Step 1

    Crack eggs into a bowl, add milk and a pinch of salt. Mix extremely thoroughly, until the yolks/whites are completely combined and you have one uniform color and texture.

  • Step 2

    Heat a small pan over medium-low heat, and add butter. Once the butter has melted, add the egg mixture in. Using a spatula or cooking utensil, mix the egg mixture in the pan. Once the eggs begin to set slightly, turn the heat off. At this point, add whatever omelette fillings you choose.

  • Step 3

    Test your omelette with a spatula, if it lifts off the pan easily but is still relatively soft/undercooked at the top, it is ready to roll. Carefully lift up one side of the omelette and roll it onto itself, off the pan and onto a plate. Top with salt and garnish to taste.
