    Focaccia bread: Is light & fluffy, making it the perfect vehicle for this sandwich.

    Pizza or marinara sauce: Use what you've got!

    Anchovy paste: Optional, but adds the traditional flavor of caesar salad

  • 1 loaf focaccia bread
  • 1 cup pizza or marinara sauce
  • 1 cup freshly shredded Parmesan cheese
  • 8 ounces sliced mozzarella
  • 1 cup pepperoni slices
  • 3 cloves minced garlic
  • Pinch of kosher salt
  • 1 teaspoon anchovy paste
  • 1 egg yolk
  • 1 teaspoon Dijon mustard
  • 1 juiced lemon
  • Few dashes Worcestershire
  • 1/4 cup extra virgin olive oil
  • 2 cups fresh romaine, washed and chopped
  • roughly chopped Croutons

Method

  • Step 1

    Preheat oven to 400F. Slice loaf of focaccia in half down lengthwise down the middle, opening it up. Lay the bread down on a parchment-lined baking sheet.

  • Step 2

    On both slices of bread, spread out the pizza sauce. Then sprinkle on about 3/4 of the Parmesan, and lay down the sliced mozzarella. On one half of the bread, spread out the pepperoni cups. Place into the oven to bake for about 20 minutes, or until cheese is melted and bubbly and pepperoni is lightly crisped up.

  • Step 3

    Meanwhile, make Caesar dressing. On a cutting board, place the minced garlic and kosher salt. Use your knife to mash/spread the garlic into a paste. Move the paste into a small bowl and add in the anchovy paste and mix. Add in the egg yolk, mustard, lemon juice, and Worcestershire. Mix, then slowly drizzle in the olive oil while mixing, until an emulsion forms.

  • Step 4

    In a large bowl, add in the chopped romaine and drizzle on the dressing. Add on the croutons and the remaining Parmesan, and mix to evenly dress the salad.

  • Step 5

    When the sandwich is done baking, remove from oven and place the Caesar salad on the side that doesn’t have the pepperoni. Close the sandwich. Wrap it in parchment and slice it into 2 or 4 sections. Enjoy immediately!
