"Growing up in New Jersey, Penne alla Vodka was a regular in our Sunday sauce rotation. Those were the Sundays I’d look forward to the most. I love vodka sauce and my mom had the best recipe as far as I was concerned.

When I grew up, and went off to college, it was hard to adjust to the food offered on my meal plan. When my parents would visit, a reminder call would always be placed a day or two ahead to make sure my mom didn’t forget my most missed food of all - penne alla vodka. It wasn’t until I started sharing it with my friends, that I realized-hey, maybe my mom's recipe really is the best. All my new friends were going crazy for it, too. They started getting excited for my parents to visit & would ask me, “Your mom is bringing the vodka sauce, right?” This was around the same time my curiosity for cooking started to take off, so I asked her, “How do you make the vodka sauce? Is it hard? It seems complicated. Think I can do it?” She gave me the surprisingly easy recipe with only one warning that went with it - you absolutely HAVE TO use Tuttorosso Tomato Sauce. That’s the key, the magic to the sauce.

I got all the ingredients and gave making the sauce a try myself. It was way easier than I anticipated. I guess I just expected it to be hard because of how good it was, but that wasn’t the case at all. When you use the brand Tuttorosso, you’re getting the absolute best canned tomatoes you can buy. They steam preserve them and don’t use a BPA-lined can, and let me tell you, in a sauce that’s primarily tomato based, thats what really counts. Now that I’m older and have a family of my own that’s requesting the same vodka sauce, Tuttorosso tomatoes are all that I use. That’s what brings the magic, that’s the true key! In the event my children ask me, like I asked my Mother, “Mom, how do you make this?” I’ll tell them the same, “I’ll give you the recipe, but you have to use the Tuttorosso tomatoes.""

ingredients

  • 2 tablespoons olive oil
  • 1/2 onion, diced
  • 4 cloves garlic, minced
  • Crushed red pepper flakes, optional
  • 1/2 cup vodka
  • 1 (28 ounce) can Tuttorosso Tomato Sauce
  • Salt, To Taste
  • Pepper, To Taste
  • 2 tablespoons Italian seasoning
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 pound dried penne, cooked according to package directions

Method

  • Step 1

    Heat olive oil and sauté onion and garlic until it’s soft (add hot pepper flakes here if desired).

  • Step 2

    Add the vodka. Bring the heat up and boil for 2-3 minutes. Add the tomato sauce, season with salt, pepper and Italian seasoning. Reduce the heat and simmer for 30 minutes stirring occasionally.

  • Step 3

    Add the heavy cream and parmesan cheese and simmer for an additional 30 minutes. Season to taste and serve over prepared pasta.
