What an irresistibly lovely side dish. @aichabouhlou makes these sumptuous, spicy Thai flavored potatoes. I'm in.

  • 4 cups potatoes
  • 3 tablespoons vegetable oil
  • 8 tablespoons rice vinegar
  • 2 red chilis, Chopped
  • 1 teaspoon grated ginger
  • 2 teaspoons brown sugar
  • 1 clove garlic
  • 4 scallions, Chopped
  • Fresh coriander, Chopped
  • Parsley, Chopped
  • Peanuts, Chopped


  • Step 1

    Preheat the oven to 400F.

  • Step 2

    Roast potatoes in the oven with oil and salt until they are golden brown and crisp.

  • Step 3

    Add vinegar, sugar, garlic, chili, ginger to a saucepan and simmer for 1 minute until sugar dissolves.

  • Step 4

    Toss potatoes, vinegar mixture, scallions and herbs to combine.

  • Step 5

    Taste and season with salt and pepper and top with chopped peanuts.
