Peach cobbler inspired nice cream is made for hot summer afternoons.

Peach & Vanilla Cobbler Nice Cream

Peach puree:

3 peaches

1 tbsp maple syrup

Remove the stones from the peaches and add the flesh and maple syrup to your blender. Blend into a puree

Maple granola: (makes a big batch)

1 cup oatflakes

1 cup pecans

1 cup raw coconut flakes

4 tbsp maple syrup

¼ tsp cinnamon

1 tsp vanilla extract

2 tbsp melted coconut oil

2 tbsp of the peach puree (optional)

Pinch of salt

Preheat your oven to 200 degrees Celsius.

Blitz the oatflakes, pecans and coconut flakes in a food processor for a couple of seconds. You just want them to be roughly chopped.

Add all the granola ingredients to a large mixing bowl and stir until the mixture is coated evenly.

Spread the granola mix out evenly on a baking sheet lined with parchment paper.

Bake for 5-7 minutes then take out from the oven and p stir the mixture, place back in the oven for another 5 minutes.

Allow the granola to cool. You can store any you don’t use straight away in an airtight container.

Vanilla Nicecream:

4 large frozen bananas

1 vanilla pod or 1 tsp vanilla powder or 2 tsp vanilla extract

Splash of coconut milk

1 sliced peach for garnish

Blend all ingredients in a food processor or blender until smooth and creamy.

In a serving jar layer your granola, nicecream and peach puree and garnish with peach slices and a dusting of cinnamon
