Tarragon and Sherry Blueberry Reduction

"Blueberries taking a butter bath with some tarragon and sherry. Blueberries are so good right now! This is the only time of year I’ll eat them since they’re so flavorful."

Serves or Makes: About 1 cup

  • 1 cup butter
  • 1 tablespoon sherry vinegar
  • 2 tablespoons fresh tarragon
  • 1 tablespoon chicken demi-glace
  • 1 cup fresh seasonal berries


  • Step 1

    Cook butter in a medium saucepan until it is melted and browned.

  • Step 2

    Add sherry vinegar to the butter. Mix to combine.

  • Step 3

    Mix chicken demi-glace and berries into the pan.

  • Step 4

    Turn off the stove, and continue tossing the berries and let the residual heat break down the berries a bit.

  • Step 5

    Finish by adding the tarragon.
