Roasted Pumpkin With Thyme

"It’s Halloween tomorrow, so expect a lot of pumpkin content coming your way. Starting off with this simple roasted one with almond cheese crumble and thyme"

Ingredients:

1 large acorn squash

1 tbsp of oil

1 tbsp of maple sirup

5-7 stalks of fresh thyme

a sprinkle of sea salt

1/2 cup of soaked almonds

1 tbsp of nutrition yeast

the juice of 1/2 lemon

garlic powder and salt to taste

Method:
Preheat the Oven to 200°C (400F).
Slice the squash and leave the seeds inside.
Now place them on a baking tray line with parchment and drizzle with oil, maple sirup and salt and thyme.
Place in the oven and bake for about 25 min.
In the meantime add the soaked almonds, nutritional yeast, lemon juice, salt & garlic powder to a food processor and pulse until you get a soft crumbly texture. Add some water if necessary.
After 25 mins of baking remove the squash form the oven, sprinkle the almond crumble on top and bake for another 10 minutes.
