ingredients

  • 2 1/2 tablespoons ground flax seed
  • 1 tablespoon water,
  • 2 medium ripe bananas, mashed
  • 2 tablespoons plant-based milk,
  • 1/2 teaspoon vanilla extract
  • 1 cup old-fashioned oats
  • 2 tablespoons vegan dark chocolate chips (raisins for sugar free),
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon baking soda

Method

  • Step 1

    Preheat the oven to 350 F.

  • Step 2

    To make the flax egg, mix the ground flax seed and water in a small bowl and put aside for about 5 minutes.

  • Step 3

    In the meantime, mix the wet ingredients (mashed bananas, milk, vanilla) in a bowl. Add the flax egg once it has soaked up the water a bit, and the texture resembles that of an egg.

  • Step 4

    In a separate bowl, mix the oats, dark chocolate chips (or raisins if you would like to keep it free of added sweeteners), cinnamon and baking soda.

  • Step 5

    Mix the wet and dry ingredients together, and divide the mixture between six greased muffin molds.

  • Step 6

    Bake for about 25 minutes, until golden on top and a skewer inserted comes out clean.

  • Step 7

    Cool the oatmeal cups in the molds. Then remove and serve with nut butter and/or fresh fruits.

  • Step 8

    Store the leftovers in the fridge and reheat before consuming. You can also freeze them for a quick breakfast when you are in a rush or have an empty fridge after traveling!
