Cottage Cheese Pancake
- 125 grams cottage cheese
- 2 eggs
- 1/2 tablespoon chia seeds
- 1 tablespoon flax seeds
- Pinch of salt

- 1 apple, thinly sliced
- Cinnamon
Method
Step 1
Preheat oven to 350°F.
Step 2
Blend the pancake ingredients in a mixer or with an immersion blender. Let the mixture sit for a couple of minutes so the batter thickens.
Step 3
Pour the pancake mixture on a sheet pan lined with parchment paper.
Step 4
Top the pancake with thinly sliced apples and cinnamon.
Step 5
Bake for 18 minutes.
