ingredients

  • 1 stick vegan butter
  • 1/2 cup sugar
  • 1 1/2 teaspoons high quality matcha
  • 1 egg replacer
  • 1/2 teaspoon pure vanilla extract
  • 1/2 tablespoon lemon juice
  • tablespoon plant milk
  • 1 1/2 cups cups all purpose flour
  • 1/2 teaspoon baking soda
  • Pinch of salt

Method

  • Step 1

    In a bowl beat the vegan butter & sugar together until creamy (~1 min). Add in the vegan egg replacer, matcha, lemon juice, and vanilla extract.

  • Step 2

    Mix in the flour, salt, & baking soda. Combine until dough forms, if dough is crumbly add 1 tsp of plant milk until you can form a ball with the dough (should be around 1 tbsp plant milk)

  • Step 3

    Roll dough into balls and then roll them in sugar. Place dough on parchment lined sheet. slightly press down on dough and bake for 10-12 minutes (until edges are just set)

  • Step 4

    Tap baking sheet on the counter to flatten the cookies. Let cool before eating & enjoy!
