  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 2 1/2 cups cake flour
  • 1 1/4 teaspoon baking powder
  • 1 teaspoon fine sea salt
  • Zest of 1/2 orange (about 1 teaspoon)
  • 1 cup desiccated coconut

Filling

  • Zest of 1/2 orange (about 1 teaspoon)
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cardamom
  • 1 cup apricot jam

Make the Pastry

Method

  • Step 1

    In a large bowl, cream together 1 cup butter, 3/4 cup sugar, 1 egg, and 1 1/2 teaspoons vanilla extract until smooth.

  • Step 2

    Sift 2 1/2 cups cake flour, 1 1/4 teaspoons baking powder, and 1 teaspoon salt into the wet mixture. Mix until a dough forms.

  • Step 3

    Separate 1/3 of the dough and set it aside. Refrigerate the remaining dough.

  • Step 4

    Add the zest of 1/2 orange (about 1 teaspoon) and 1 cup desiccated coconut to the reserved dough. Freeze this portion until firm enough to grate.

Make the Filling

  • Step 1

    In a small saucepan, combine 1 cup apricot jam, zest of 1/2 orange (about 1 teaspoon), 1/2 teaspoon cinnamon, and 1/4 teaspoon cardamom. Heat over low-medium heat until fragrant and smooth. Let cool.

Assemble the Tart

  • Step 1

    Preheat the oven to 350°F.

  • Step 2

    Press the refrigerated dough into a greased or parchment-lined 8x8-inch baking pan. Spread the cooled jam mixture evenly over the base.

  • Step 3

    Grate the frozen coconut dough over the top to create a crumble-like topping.

Bake

    Bake for 20–25 minutes, or until golden brown.
