Blueberry Vanilla Layer Cake

Recipe Card

For Cake:


  • 2 cups cake four
  • 1 3/4 cup all purpose flour
  • 2 1/4 teaspoon baking powder
  • 2 sticks unsalted butter
  • 3 cups granulated sugar
  • 3/4 teaspoon salt
  • 1 tablespoon vanilla extract
  • 1 cup egg whites
  • 1 1/2 cups milk
  • 1 cup washed and dried blueberries

For the cake


  • Step 1

    Sift dry ingredients together and set aside.

  • Step 2

    In a stand mixer with a paddle attachment, cream butter and sugar on low speed first, then move up to medium speed and mix until light and fluffy (about 8ish minutes). Add the salt and vanilla and mix until combined.

  • Step 3

    On low speed, gradually add the egg whites, scraping your bowl often. Alternately add the flour and milk, beginning and ending with the flour. Scrape your bowl again to make sure all your flour is combined.

  • Step 4

    Pour the cake batter into greased and parchment paper-lined pans. Bake at 350F for approximately 20-30 minutes or until done.

  • Step 5

    Let your cakes cool for at least 20 minutes before turning them out of your cake pans.

For the fresh cream icing


  • 2 cups Heavy Whipping Cream
  • 1/2 cup Powdered sugar
  • 1 teaspoon Vanilla Extract

For the fresh cream icing

  • Step 1

    In a stand mixer with a whisk attachment, on medium speed, whip your whipping cream until foamy.

  • Step 2

    Gradually add your powdered sugar, vanilla extract and continue to whip until light and fluffy. About 4-5 minutes.
