This bright and creamy avocado toast is topped with crunchy vegetables, smoked salmon, and everything bagel seasoning for a zippy breakfast or weekend brunch.

ingredients

  • 1 avocado, cut in half, pit removed
  • 1 red radish, sliced
  • 1 baby cucumber, sliced
  • 3 ounces smoked salmon
  • 1/4 lemon, cut into wedges
  • 1 ounce alfalfa sprouts, rinsed
  • 1 tablespoon olive oil, for toasting
  • 1 tablespoon everything but the bagel seasoning

Method

  • Step 1

    Using a medium sized pan, drizzle olive oil onto the bread slices and toast on medium-low heat.

  • Step 2

    In a clean bowl, scoop out the flesh of a ripe avocado and mash using a fork.

  • Step 3

    Divide and spread the avocado mixture onto the bread slices. Add the radish, cucumber, smoked salmon, lemon wedges, alfalfa sprouts and sprinkle with everything but the bagel seasoning.
