ingredients
- 1 head cauliflower
- 1 tbsp olive oil
- 1 medium diced onion
- 2 ripe and mashed avocados
- 4 cloves minced garlic
- 1/4 cup freshly squeezed lime juice
- 1/4 cup diced jalapenos
- 1/4 tsp chilli flakes
- 1 cup chopped fresh coriander leaves
- 1/4 tsp black pepper
- 1/2 tsp sea salt
Method
Step 1
Make cauliflower rice: Place cauliflower in a food processor and process until cauliflower crumbles and resembles rice. As another option, grate your cauliflower roughly, using a grater. Set aside.
Step 2
Heat olive oil in a frying pan and add onion and garlic. Sauteé for 2 minutes. Add cauliflower rice and cook for another 5 minutes over medium heat.
Step 3
Meanwhile, mash avocados with a fork in a bowl. Add lime juice, coriander, chilli flakes, and jalapenos. Mix and taste. Add salt and/or pepper according to your liking.
Step 4
Remove the cauliflower rice from heat and stir into mashed avocados mixture. Taste and add more salt and/or pepper.
Step 5
Serve as an appetizer, main dish or a dip for tortilla chips.
