ingredients
- 1 tabelspoons olive oil
- 1 ounce green bell peppers
- 1 ounce onion
- 18 ounce turkey breast
- 1 tsp smoked paprika (spices)
- 1 tsp ground cumin (spices)
- 1 tsp dried oregano (spices)
- 4 medium flour tortillas
- 2 cups shredded Monterey jack
- 2 cups shredded cheddar
- 2 thinly sliced green onions
- Sour cream, for serving
- Salt and pepper to taste
- 1 cup chicken stock
Method
Step 1
In a large skillet over medium-high heat, add olive oil.
Step 2
Add chopped peppers and minced onion.
Step 3
Cook until soft for 5 minutes. Set aside to cool.
Step 4
Sauté chopped turkey breast.
Step 5
Add stock, spices, and simmer for 15 minutes.
Step 6
Season with salt and pepper. Set aside to cool.
Step 7
Add 1 flour tortilla to skillet.
Step 8
Sprinkle the cheese, turkey mixture, and pepper-onion mixture into the half portion of tortilla.
Step 9
Fold the other half of the tortilla over and cook.
Step 10
Cook each side for 3 minutes.
Step 11
Repeat with the remaining ingredients.
Step 12
Slice into wedges and serve with sour cream.
