Homemade Aperol Spritz

"Aperol Spritzers are very popular right now. So, we came up with our own version. There aren’t as many flavors in ours as in the store bought version. But, we think it’s cleaner with more potent flavors."

Recipe Card


  • 1 Valencia, Hamlin or Seville oranges
  • 1 ounce vodka
  • 14 ounce unsweetened orange juice
  • 1 ounce rhubarb
  • 4 tsp sugar
  • 15 ounce dry sparkling wine
  • 5 ounce club soda
  • ice


  • Step 1

    Chop rhubarb into crescents

  • Step 2

    Peel one orange leaving on the white pith

  • Step 3

    Slice the second orange. Cut the slices in half to form crescents.

  • Step 4

    Add peel and pith of one orange, chopped rhubarb, orange juice and sugar to a pot.

  • Step 5

    Heat on the lowest setting on your stove.

  • Step 6

    When the mixture is warm, add the vodka and simmer for an additional 20 minutes.

  • Step 7

    Stir to make sure that sugar is dissolved and to ensure that mixture doesn't get too hot. You don't want steam.

  • Step 8

    After 20 minutes, remove mixture from heat and strain.

  • Step 9

    Refrigerate until chilled.

  • Step 10

    Add ice to glass.

  • Step 11

    Add sparkling wine, club soda and 3 ounces of the orange rhubarb mix to the glass.

  • Step 12

    Garnish with an orange wedge and serve.
