Delicious Sweet Potato Gnocchi

ingredients
- 2 pound sweet potatoes
- 2 cup all-purpose flour
- 2 tsp kosher salt
- 1 large egg
- 1 tabelspoons olive oil
- 1 sprig Rosemary
- 1/2 pound shitake mushrooms
- 2 cup vegetable stock
- 1 tabelspoons butter
Method
Step 1
Preheat oven to 350 degrees Fahrenheit.
Step 2
Scrub and peel the sweet potatoes.
Step 3
In a shallow baking sheet, layer all the sweet potatoes and add the oil.
Step 4
Add the rosemary sprigs and a teaspoon of salt. Bake for 1 hour.
Step 5
Let it cool and transfer to a medium bowl.
Step 6
Cut potatoes in half crosswise and pass through a masher.
Step 7
Simmer vegetable stock and shitake mushrooms 10 minutes.
Step 8
Mix together flour, egg, and salt into the mashed sweet potato.
Step 9
Lightly dust your working area with flour.
Step 10
Mix with your hands until the flour is moistened and a dough starts to form.
Step 11
Knead gently until the flour is fully incorporated and the dough is soft.
Step 12
With the palms of both hands, roll the dough until it forms a long cigar.
Step 13
With a knife, cut into bite-sized pieces.
Step 14
Set aside and cover with parchment paper.
Step 15
In another heavy bottom pan, bring water to a boil and add salt.
Step 16
Cook the sweet potato gnocchi for 8 minutes, remove and transfer to a serving platter.
Step 17
In a pan, create a roux by mixing 1 tbsp. butter and 1 tbsp. flour.
Step 18
Add the mushroom-infused stock, stir until thickened.
Step 19
Season with Salt and pepper.
Step 20
Mix together with the cooked Gnocchi and Serve.
