ingredients

  • 1 cup gluten free flour
  • 1 cup powdered sugar
  • 5 ounce butter
  • 2 large Eggs
  • 1/2 cup lemon

Method

  • Step 1

    Preheat oven to 350 degrees Fahrenheit

  • Step 2

    Grease and line the base and sides of a 7-inch spring form tin with a baking paper

  • Step 3

    In a food processor, add the flour, 2.5 oz of butter and 1 slightly beaten egg.

  • Step 4

    Pulse until its crumbly.

  • Step 5

    Divide the dough into two.

  • Step 6

    Press one half of the dough into the base of the tin and set aside.

  • Step 7

    Prepare the lemon curd by placing 1/2 cup lemon juice, 1/2 cup powdered sugar, slightly beaten egg and 2.5 oz butter in a saucepan.

  • Step 8

    Stir continuously until thickened, on low heat.

  • Step 9

    Pour the lemon curd onto the cake base.

  • Step 10

    Top with the remaining crumble mix.

  • Step 11

    Bake until golden brown for 30 minutes.

  • Step 12

    Cool and remove from spring form tin

  • Step 13

    Dust with confectioners sugar and serve.
