A Note from Feedfeed

This is a pizza recipe from Una Pizza Napoletana in New Jersey. Chef/Owner Anthony Mangieri has a couple of tips for home chefs who want to make delicious pizza at home!

Chef Mangieri says: "Use San Marzano DOP tomatoes for the tomato sauce (make sure they are certified and authentic; they have a more complex taste)."

He also says, "Use Extra Virgin Olive Oil. It's best if it's a coastal oil, such as from Liguria or the Amalfi coast. They tend to be lighter, and allow all the other ingredients to come through on the pizza and taste more balanced.

Chef Mangieri does not share his homemade pizza dough recipe, but he says "Use your favorite recipe for sourdough/naturally leavened dough or a good highly hydrated dough recipe. If you don’t have a go-to recipe, store bought dough can be substituted."

ingredients

  • 10 ounces pizza dough
  • 1/2 cup San Marzano tomatoes, crushed
  • 1/2 cup cubed Mozzarella di Bufala
  • 1 tablespoon Extra Virgin Olive Oil
  • 5 leaves fresh basil
  • 1 pinch coarse sea salt

Method

  • Step 1

    First, allow the dough to proof and reach room temperature. Preheat the oven to the highest it will go. Place a pizza stone or a large, flat baking sheet upside down in the oven while it preheats, so the stone or sheet also gets very hot.

  • Step 2

    While the oven is preheating, flatten the dough on a clean, floured surface. Flatten dough gently with your finger tips, flip over and repeat. While flattening, try not to press on the edges; this will allow air to remain and create a nice air filled rim.

  • Step 3

    Once the pizza dough is stretched out to 11 to 12 inches, carefully remove the preheated baking sheet from the oven, dust it with flour, and place the dough onto it. Top the dough with half of the tomatoes and half of the Extra Virgin olive oil. Make sure not to spread the sauce and oil too close to the edges.

  • Step 4

    Carefully move the pan and pizza into the oven. Allow dough to set for about 2 minutes, then remove from the oven. Cover the pizza with the remainder of the tomatoes, extra virgin oil, all of the mozzarella, sea salt and 2 basil leaves.

  • Step 5

    Put the pizza back into the oven and let cook until cheese is melted and crust is lightly colored, which should take 7-10 minutes.


  • Step 6

    Once fully baked, remove the pizza from the oven. Place 3 more basil leaves on top and serve hot. Enjoy!
