ingredients

  • olive oil
  • 1 1/2 pound ground turkey
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoons dried thyme
  • 3 tablespoons worcestershire sauce
  • 1 small sliced yellow onion
  • 1 cups sliced sweet peppers
  • 2 cups sliced green bell peppers
  • 8 oz sliced baby bella mushrooms
  • shredded mozzarella cheese

Method

  • Step 1

Swirl olive oil in cast iron over medium heat - add turkey. Add in salt, pepper, paprika, onion powder, garlic powder, dried thyme, and worcestershire sauce - cook until cooked through.

  • Step 2

Remove meat from pan, keeping all juices. Swirl olive oil (adding to existing juices), add in onions and sprinkle a bit of salt. Cook until translucent, about 5 minutes.

  • Step 3

Add sweet and green peppers, cook another 5-8 minutes Add mushrooms to mix, cooking about 4-6 minutes Mix veggies well, watching as juices evaporate and veggies start to caramelize. Keep cooking until vegetables start to gain some color and are cooked through. This depends on temperature, so stir often and just watch them - it will probably take about 10-15 minutes.

  • Step 4

Return meat to cast iron with veggies Turn heat off Add shredded mozzarella to top of dish and broil in oven until bubbly and golden!
