ingredients

  • 1 whole sliced red onion
  • 1 medium chopped red bell pepper
  • 1/2 chopped jalapeno
  • 2 minced garlic cloves
  • 1 14 ounce block crumbled tofu
  • 1 teaspoon taco seasoning
  • 1 teaspoons garlic powder
  • 1 teaspoons chili powder
  • 1 teaspoons ground cumin
  • 1 14 oz can diced tomatoes and juice
  • 1 medium roasted spaghetti squash
  • 1/2 bunch chopped cilantro
  • 1 cups shredded mexican cheese
  • Garnish guacamole
  • Garnish black olive
  • Garnish sour cream
  • Garnish jalapeno

Method

  • Step 1

    Swirl pan with olive oil and add onions. Sprinkle salt and saute about 8 minutes or until starting to become translucent.

  • Step 2

    Add red bell pepper and jalapeño, stir to combine and allow to cook for a few minutes before adding garlic and tofu.

  • Step 3

    Add in dried seasonings (taco, garlic powder, chili powder, and cumin) - stir to combine really mixing in with the tofu. Add in tomatoes and spaghetti squash, stirring to combine and untangle squash.

  • Step 4

    Taste for seasoning..add salt if needed. Add majority of cilantro - saving some for garnish (you just need a sprinkle for top). Turn off the heat, sprinkle cheese so most of top is covered and broil entire skillet until cheese melts and become bubbly!

  • Step 5

    Finish with desired toppings and remaining cilantro. finish with toppings (garnishes) and sprinkle cilantro!
