Jalapeno Popper Chicken Casserole

  • 1 pound cooked and shredded chicken breast
  • 4 oz room temperature and cubed cream cheese
  • 1/2 cups chicken stock
  • 1/2 cups heavy whipping cream
  • 1 teaspoons garlic powder
  • 1 teaspoons smoked paprika
  • 4 seeds removed jalapeños
  • salt
  • shredded cheddar cheese to top
  • 4 pieces chopped cooked bacon


  • Step 1

    Preheat oven to 375.

  • Step 2

    Lay chicken on bottom of casserole dish (I used a 8x10) Mix together cream cheese, stock, cream, garlic powder, paprika, and salt to taste and pour over chicken.

  • Step 3

    Place jalapeños on top and sprinkle with cheddar cheese. Bake uncovered for 15-20 minutes or until bubbly and starting to golden around edges.

  • Step 4

    Top immediately with bacon and let sit for 5 minutes.
