ingredients
- 8 ounces packet paneer cut into cubes
- 1 red Onion, cut into cubes
- 1 green Pepper, cut into cubes
- 2 tomatoes, cut into cubes
- 1 1/2 cups whisked greek yogurt
- 1 tablespoon crushed ginger
- 1 tablespoon crushed garlic
- 1 teaspoon corriander powder,
- 1/2 tablespoon chili powder,
- 1/2 tablespoon garam masala,
- 1 tablespoon salt,
- 2 tablespoons olive oil,
- 1 lemon juiced,
- 2 tablepoons chopped cilantro
- 2 tablepoons chopped mint
Method
Step 1
Whisk the yogurt in a bowl. Add all the ingredients for the marinade- oil, ginger, garlic, coriander powder, garam masala, chili powder and salt.
Step 2
Combine everything together. Add the cilantro, mint and juice of one lemon. Mix well.
Step 3
Add the paneer cubes, tomatoes, onions and green pepper. Stir in the marinade well until the paneer and vegetables are coated well. Cover the bowl and refrigerate for 1-5 hours.
Step 4
After an hour take the marinated paneer and vegetables out of the refrigerator. Take a skewer and arrange the paneer, tomatoes, green pepper and red onions, alternating with each other.
Step 5
Preheat the oven at 450 F degrees. Arrange the skewers on the baking tray lined with parchment paper. Spray the skewers with oil.
Step 6
Bake in the oven for 10 mins and then broil for 3-4 minutes or until slightly charred.
Step 7
Remove from oven, squeeze with lemon juice. Enjoy!
