Sweet Potato Carrot Waffles

  • 2 medium sweet potatoes
  • 3 large carrots
  • 3/4 cup coconut oil, plus more for cooking the carrots
  • 1 cup nut milk
  • 8 eggs
  • 1 1/3 cups cassava flour
  • 4 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 2 teaspoons ginger
  • 2 teaspoons cardamom
  • Banana, sliced, for topping
  • Granola, for topping
  • Nut butter, for topping
  • Pecans, for topping


  • Step 1

    Preheat oven to 400ºF. Toss carrots with oil and spread out on a sheet pan. Wrap the sweet potatoes in tin foil and place on same sheet pan. Roast until fork tender, about 35 minutes. Let cool slightly and scoop sweet potato flesh out of the skin.

  • Step 2

    Blend all the wet ingredients first then add flour, baking soda, spices. Cook in waffle iron. Top with desired toppings.
