ingredients
- 2 tablespoon Curry Powder
- 2 tablespoons Avocado oil
- 4 large diced carrots
- 3 diced celery ribs
- 1 diced yellow onion
- 6 cups chicken broth
- 3 tablespoon corn starch
- 3 tablespoon cold water
- 1 teaspoon salt
- 1 cup cooked & chopped chicken
- 1 cup cooked basmati rice
- 1 cup diced tart apples
- 1/2 cup heavy cream
Method
Step 1
Start by toasting your Curry powder. In a dry pan, toast on medium/high heat for ~2 minutes until fragrant. Set aside.
Step 2
Dutch oven or other large pot, heat the oil. Add carrots, celery and onion and saute for 2 minutes.
Step 3
Add chicken broth and bring to a boil.
Step 4
Add cornstarch mixed in cold water.
Step 5
Add toasted Curry powder and salt. Simmer for 5 minutes.
Step 6
Add cooked chicken, cooked rice and apples. Bring to a boil again.
Step 7
Add cream and serve.
