For the Apple Filling
- 1 large apple (e.g., Cosmic, Honeycrisp, or Granny Smith), peeled, chopped, and tossed with lemon juice
- 2 tablespoons light brown sugar
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- 2 tablespoons softened unsalted butter
- 1/2 teaspoon cornstarch mixed with 2 teaspoons water

- 1 sheet store-bought puff pastry (thawed) or pie dough
- Maple syrup, for glazing
- Turbinado sugar or cane sugar, for sprinkling on top
Method
Prepare the Apple Filling
Step 1
In a medium saucepan, melt the butter over medium heat.
Step 2
Add the chopped apple, brown sugar, cinnamon, and vanilla extract. Cook for 7-8 minutes, or until the apples are partially softened.
Step 3
Stir in the cornstarch mixture and cook until the mixture reaches a boil. Remove from heat and let cool to room temperature or refrigerate overnight.
Assemble the Pies
Step 1
Roll out the puff pastry or pie dough on a lightly floured surface to 1/8-inch thickness. Keep the dough cold throughout the process.
Step 2
Cut out 12 circles, each 3 inches in diameter, using a cookie cutter. Arrange the circles on a baking tray lined with parchment paper.

Place 2 tablespoons of apple filling in the center of 6 of the dough circles. Brush the edges with a small amount of milk.
Step 4
Top with the remaining 6 dough circles. Use a fork to press and seal the edges. Cut 3 small slits on the top of each pie to allow steam to escape.

Bake
