For the Apple Filling

ingredients

  • 1 large apple (e.g., Cosmic, Honeycrisp, or Granny Smith), peeled, chopped, and tossed with lemon juice
  • 2 tablespoons light brown sugar
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons softened unsalted butter
  • 1/2 teaspoon cornstarch mixed with 2 teaspoons water

  • 1 sheet store-bought puff pastry (thawed) or pie dough
  • Maple syrup, for glazing
  • Turbinado sugar or cane sugar, for sprinkling on top

Prepare the Apple Filling

Method

  • Step 1

    In a medium saucepan, melt the butter over medium heat.

  • Step 2

    Add the chopped apple, brown sugar, cinnamon, and vanilla extract. Cook for 7-8 minutes, or until the apples are partially softened.

  • Step 3

    Stir in the cornstarch mixture and cook until the mixture reaches a boil. Remove from heat and let cool to room temperature or refrigerate overnight.

Assemble the Pies

  • Step 1

    Roll out the puff pastry or pie dough on a lightly floured surface to 1/8-inch thickness. Keep the dough cold throughout the process.

    Cut out 12 circles, each 3 inches in diameter, using a cookie cutter. Arrange the circles on a baking tray lined with parchment paper.

    Place 2 tablespoons of apple filling in the center of 6 of the dough circles. Brush the edges with a small amount of milk.

Bake
