"This is just one of those desserts, I would love to eat EVERY FRIDAY night as one entire meal. It is so damn delicious. I’ve made this Maida Free, Butter Free, Refined Sugar free! I’ve used coconut sugar and made it refined sugar free. You can absolutely use brown sugar, it goes perfectly too! My dad loves this so much, it’s one of those rare times he asked for one extra piece of this, SOOOO HAPPYYYY!"

ingredients

  • 1/2 cup almond flour
  • 3/4 cup oats flour
  • 1/3 cup coconut sugar or brown sugar
  • 1/2 teaspoon baking powder
  • 1 egg
  • 1/4 cup olive oil
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1/2 cup chocolate chips

Method

  • Step 1

    Preheat the oven to 350°F.

  • Step 2

    In a bowl mix, almond flour, oats flour, baking powder and sugar. Mix well.

  • Step 3

    In another bowl, add oil, milk and the egg. Whisk it well with a beater or a hand whisk. Add the vanilla extract. Mix well.

  • Step 4

    Add the dry ingredients to the wet ingredients and mix well using a spatula until all is combined. Add the 1/2 cup chocolate chips/chunks and mix well.

  • Step 5

    Pour the batter into a 6 or 8 inch baking dish or skillet. Top the remaining chocolate chips on the top. Bake for 30 minutes or until the top of the cookie cake has turned golden brown.

  • Step 6

    Serve warm with Nutella and Vanilla Ice Cream. Enjoy!
