Dough

ingredients

  • 10 gram Coconut oil (melted)
  • 20 gram Chocolate protein powder
  • 1 tbsp Unsweetened Cocoa
  • 60 gram Puffed quinoa
  • 2 tablespoons Fiber syrup (I used Nicks with a honey flavour)
  • 1 tbsp Almond butter

Toppings

  • 25 gram Dark chocolate (No added sugar)
  • Freeze dried raspberries (optional but I highly recommend)

Method

  • Step 1

    If you already have puffed quinoa skip step 1-5. Preheat oven to 150°C (300°F)

  • Step 2

    Rinse 1/2 cup of uncooked quinoa thoroughly.

  • Step 3

    Place your rinsed quinoa on a baking sheet. Dry your quinoa in the oven. I placed mine in a 150°C oven to speed up the process (May take 10-15 minutes).

  • Step 4

    Place a tablespoon of coconut oil in a heavy cast iron and allow it to melt.

  • Step 5

    Add your dried and rinsed quinoa to the pan. Move the pan constantly to allow the quinoa to puff. Continue to move the pan with the lid on until the popping sounds slow (make sure it doesn’t burn)

  • Step 6

    Let your puffed quinoa cool down and then combine all the ingredients.

  • Step 7

    Roll into 10 balls and dip the balls in melted dark chocolate. Let it cool in the refrigerator.

  • Step 8

    Before serving, add freeze dried raspberries on top. I prefer to take them out from the refrigerator a few minutes before serving.
