Dough
ingredients
- 25 gram Blueberries
- 20 gram Defatted Almond Flour
- 15 gram Vanilla Casein Protein Powder
- 20 gram Vitafiber
- 1 tablespoons Fiber syrup
- 2 tbsp Milk of your choice
- 7 gram Coconut Oil
- a pinch of Salt
Blueberry filling + White Chocolate Coating
ingredients
- 20 gram Blueberries
- 2 tablespoons Milk of your choice
- 12 teaspoons Sweetener (Erythritol. I used Nicks use like sugar). You decide how sweet you want it to be
- 30 gram White chocolate (No added sugar)
Method
Step 1
Preheat the oven to 175°C (347°F).
Step 2
Begin with the dough. Melt the coconut oil, set aside and let it cool slightly. Stir dry ingredients to the dough and then add coconut oil mixed with blueberry syrup (mash blueberries and strain into a smooth sauce. Then mix it with fiber syrup) and oat milk. Work together into a dough.
Step 3
On a parchment paper, press the dough into a rectangle and bake for about 10 minutes in the middle of the oven. Set aside to cool.
Step 4
Heat up blueberries together with milk and sweetener in a sauce pan until it is a thick sauce (5-10 minutes) Spread the blueberry mix on top of the baked protein bars. Set aside to cool (In the fridge for about 10 minutes)
Step 5
Cover the bars in melted chocolate and set aside in the fridge again. Take them out for about 10-15 minutes before serving.
