ingredients

  • 7 pounds fresh Turkey breast
  • 1/2 cup maple syrup
  • 3/4 teaspoons divided ground thyme
  • 3/4 teaspoon divided rubbed sage
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon fresh ground pepper
  • 1 pinch nutmeg
  • 1 cup chicken stock
  • 1 cup divided water
  • 2 tablespoons corn starch

Method

  • Step 1

    Preheat oven to 325 degrees F. Season turkey breast with 1/2 tsp of thyme and sage, salt and pepper. Place into small roasting pan, or large baking dish, with about 1/2 C of water. Bake, 20 minutes per pound, basting with maple syrup every 30 minutes; internal temperature should read 165 degrees F. Let rest 15 minutes, before serving.

  • Step 2

    For gravy: skim fat from roasting pan drippings and pour into a sauce pot. Add chicken stock, 3/4 C water, 1/4 tsp of sage and thyme and a pinch of nutmeg. Bring to a boil and reduce heat to med-low. Simmer for 5-10 minutes. Combine the cornstarch with remaining 1/4 C of water. Remove gravy from heat and whisk in cornstarch. Return to heat and simmer, stirring occasionally, until gravy has reached desired consistency. Check for seasonings, adding salt and pepper if needed. Serve with the turkey.
