ingredients
- 1 bunch washed and chopped kale
- 3 tablepoons olive oil
- 3 cloves minced garlic
- 4 oz softened cream cheese
- 1/3 cup sour cream
- 1/4 cup mayonnaise
- 14 oz drained and chopped canned artichoke hearts
- 1/2 cup grated Parmesan cheese
- 1 1/2 cups grated mozzarella cheese
- 1/4 teaspoon each salt and pepper
Method
Step 1
Preheat oven to 350 degrees.
Step 2
Heat oil in a large skillet, over medium heat. Add in washed kale and toss to coat with oil. Cook for 1 minutes. Once kale starts with wilt, add in minced garlic and season with salt and pepper. Cook until soft; about 3 minutes. Let cool.
Step 3
In a microwave safe mixing bowl, add the cream cheese, sour cream, mayonnaise and 1 C mozzarella cheese. Cook in microwave for 45 seconds and stir until smooth. Stir in Parmesan, kale and artichoke hearts. Pour into an oven safe dish and sprinkle with remaining 1/2 C mozzarella. Bake for 10-15 minutes, until cheese on top begins to slightly brown.
