"Smoky Aubergine Zaalouk with Crispy Halloumi - this was one of my signature dishes from my last book, Orange blossom & Honey. It's a fabulous take on a classic Moroccan salad. the aubergines are smoked over until soft and then mixed into a lightly spiced tomato and garlic sauce. I serve this with crispy, oozy soft halloumi.
