"Mid-week date night with this Parmesan Risotto..and the hubby. Yes, the hubby too! But this Parmesan Risotto, you guys! I used to find the thought of making risotto intimidating. One summer, many years ago, I made it my mission to tackle this recipe and I am so glad I did! Although it does involve a lot of stirring, it's really not that hard at all! It's fun to make this together with the hubs as we sip on wine and take turns standing over the pot. Definitely a nice date night meal! But also, can it be the weekend already?"
