ingredients

  • 10 1/2 ounce can diced tomatoes
  • 3 red bell peppers, diced
  • 2 onions, diced
  • 2 - 3 tablespoons tomato paste
  • 4 eggs

Method

  • Step 1

    Heat oil in a medium skillet. Sauté the onions until softened. Add the bell pepper and cook until softened.

  • Step 2

    Add the tomatoes and their juices and simmer gentle for 10 minutes, stirring occasionally.

  • Step 3

    Crack eggs into skillet. Cover and cook 15 minutes.

  • Step 4

    Serve with bread and enjoy.
