This basic sourdough recipe never disappoints! You can make the whole recipe from start to finish over the weekend.

Not sure what to do with all that bread? Use it to make a sandwich, or enjoy it with compound butter

ingredients

  • 325 grams bread flour
  • 75 grams whole wheat flour
  • 300 grams water
  • 70 grams levain
  • 7 grams sea salt

Method

  • Step 1

    Combine the bread flour, whole wheat flour, water and levain and let sit for 30 minutes.

  • Step 2

    After 30 minutes, add 7 grams of sea salt. Let sit for 30 more minutes.

  • Step 3

    Perform 6 coil folds, each separated by 30-45 minutes.

  • Step 4

    Let sit for 30 min to finish bulk. Then, shape the dough and move into fridge for 12 hours.

  • Step 5

    Bake at 500°F for 17 minutes. Reduce the heat to 425°F and cook for 11 minutes. Reduce the heat to 400°F and cook for 11 more minutes.

  • Step 6

    Let the bread sit for at least one hour before slicing.
