Thai Red Curry With Vegetables

"Thai red curry packed with veggies! I made a batch of curry last night to last me the next couple of days and this is some of it! I had everything prepped and ready to go until I realized I had run out of coconut milk. I usually always have cans of coconut milk on hand and I didn't have the time to run out and get some. Luckily I recently and spontaneously ordered a nut milk bag (thanks, Amazon). So, I was able to put it to use sooner than expected to make my own coconut milk from dried coconut and water. The result was amazing and so much better and "cleaner" in taste than any canned version I've had. So here I am wondering how it took me so long to do this. Next up, hazelnut milk! "
