ingredients
Cookies
- 1 cup butter
- 1 teaspoon vanilla extract
- 2 eggs
- 1 cup sugar
- 1/2 teaspoon salt
- 3 cups 1:1 gluten free flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder

Topping
- 1 can sweetened condensed milk
- 1/2 cup semi-sweet chocolate chips
Method
For the Cookies
Step 1
Preheat the oven to 350 degrees. Line two cookies sheets with parchment paper.
Step 2
In a bowl add the sugar and butter together and mix for 5 minutes until fluffy. Mix in the eggs and vanilla.
Step 3
Add in your dry ingredients and mix until just incorporated.
Step 4
Using a scoop, scoop equal size cookies onto the baking sheet and bake for 7-10 minutes until edges are just barely golden brown. Remove and allow to cool completely.
For the Topping & Assembly
Step 1
Add the sweetened condensed milk to a small stock pot and cook over medium heat for 5 minutes.
Step 2
Once a golden color remove and allow to cool completely.
Step 3
Once cooled scoop a little onto each cookie.
Step 4
Then melt the chocolate either in a double boiler or microwave and drizzle on top of the caramel.
