Ingredients

1 1/2 cups whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 cup coconut sugar, plus more for sprinkling
1 egg
1/2 cup olive oil
1 cup shredded zucchini, squeezed dry
2 bananas, mashed
2 teaspoons lemon zest
1 tablespoon chia seeds

Directions
Preheat oven to 325˚F. Line muffin tins with paper liners. In a medium bowl sift together the dry ingredients. Set aside. In a separate large bowl beat the sugar, egg, and oil until thoroughly combined. Stir in zucchini, banana, lemon zest, and chia seeds.

Slowly fold flour mixture to the wet ingredients and stir until just combined. Add batter to prepared muffin tins and sprinkle the tops with a bit of coconut sugar. Bake for 20-25 minutes or until a toothpick inserted into the middle of a muffin comes out clean.
