Oatmeal Cookie Ice Cream Sandwiches

Our very own Kristie from @TheSweetandSimpleKitchen created these oatmeal cookie ice cream sandwiches using some awesome products from Bob's Red Mill, like their all-purpose flour, unsweetened shredded coconut and organic old fashioned rolled oats. They are the perfect dessert to help you cool off this summer!
