#SimplyElevated Chicago Dinner with Austerity Vineyards

Here at thefeedfeed, we spend a lot of time cooking, and truth be told, in my kitchen, I usually start with a glass of wine.  With their focus on up-and-coming wine regions, Austerity has become a personal go-to for wine that is nuanced yet affordable. My deep seated association between cooking and wine made me extremely excited for our second annual #SimplyElevated dinner series with Austerity Wines.  We’ve already been to Los Angeles this year, and next on our cross-country tour was Chicago. Inspired by the flavors of Austerity,  celebrated chef Dan Snowden, of Bad Hunter brought to life a feast in a way that keeps us home cooks inspired and reminds us to keep pushing the envelope. 
 
Over the years, Chicago has become one of our favorite cities to visit.  From one of our early meetups at the Farmers Market, to our first annual #SimplyElevated dinner at Ada Street Cafe , it has become a place that feels like home, one that has some serious good eats.  For dinner at Bad Hunter, we were excited to connect with old and new friends alike.  The Bad Hunter Herbarium was the perfect urban backdrop for an evening that celebrated our community and Austerity.

Austerity is focusing on grapes from the lesser known coastal regions in California (Paso Robles, Arroyo Secco & Santa Lucia Highlands), which are quickly gaining notoriety as some of the fastest growing wine regions in the world.

Joined by winemaker Steven DeCosta, not only did we dine well, but everyone learned a little bit more about the wine we were drinking and how it worked so well with the food we were enjoying.  From grilled sourdough with sunflower crema and smoked salt to the whole roasted chicken with preserved lemon yogurt, currants and parsley, each dish was executed with exacting precision.

As the night drew to a close, it was an incredible sight to see so many people in one place making new memories together and sharing in the joy that is dining together around good food, better wine, and even better company.  While we may not be in Chicago often enough, it is moments like these that keep us longing to come back.
