"PEANUT BUTTER JELLY SLICE // one of my most loved and cherished recipes, well loved and eaten quickly by those around me ? You'll need a food processor or high powered blender for this lil guy. "

Base:
1 cup almonds
2/3 cup dedicated coconut
1 cup dates, pitted
Pinch of salt & cinnamon

Pulse almonds & coconut in food processor until a fine meal forms, then add the dates & pulse until a dough starts to form.
Press into a lined loaf tin & freeze.

Peanut Butter Filling:
2 cups cashews, soaked
1 cup soy milk
2 tsp vanilla extract
2/3 cup maple syrup
1/2 cup organic smooth peanut butter
Pinch of salt
1/3 cup melted coconut oil
Blend everything apart from peanut butter & coconut oil until all lumps are gone. Add the peanut butter & coconut oil last.
Pour over the base and freeze for 1 hour.

Jelly frosting:
1 cup organic raspberry jam (or use 1 cups frozen raspberries & 1/2 cup maple syrup)
1/3 cup melted coconut oil Blend in a blender until smooth. Pour over the chilled slice and freeze the whole slice for 3-4 or overnight. Thaw for 15 mins before slicing and use a wet knife.
