1 Whole wheat prebaked pizza crust (store bought, or you could make homemade pizza dough)
2 cups roasted delicata squash (or winter squash of choice)
1 cup ricotta
1 tbsp chopped fresh sage
1 tbsp chopped fresh rosemary
2 tbsp chopped walnuts, toasted (optional)
2 tbsp dried cranberries (optional)
olive oil, as needed
salt and pepper, to taste
Preheat oven to 400˚F. Spread ricotta onto prepared pizza crust. Top with roasted squash and season with salt, pepper and a drizzle of olive oil. Bake for about 10 minutes until crust is crisp. Sprinkle with herbs, walnuts and cranberries. Enjoy.
