The color of this blueberry mousse makes it a perfect party presentation!

Serves 2

INGREDIENTS

Blueberry Mousse:
175g silken tofu
3/4cup frozen blueberries
1 Tbsp maple syrup, optional

Chia Pudding:
1/4 cup chia seeds
3/4 cup soy milk

Toppings:
Orange
Chocolate granola
Pumpkin seeds
Dessicated coconut shreds
Slivered almonds
Goji Berries
Fresh mint leaves


DIRECTIONS
For the blueberry mousse, combine ingredients in a high speed blender until smooth. Pour into a clean glass.

For the chia pudding, combine ingredients and add ontop of blueberry mousse layer. 

Add toppings and enjoy.
