"To make this zucchini pizza, use a mandolin to slice a small zucchini into thin rounds. Sprinkle the top of the rolled out focaccia dough with shredded gruyere cheese, then arrange the zucchini slices on top. Drizzle with olive oil and season with chili flakes, salt, and pepper."

Ingredients

1 batch pizza dough or foccacia dough 

1 small zucchini

1 cup shredded gruyere cheese

olive oil, as needed

pinch red chili flakes

salt and freshly ground black pepper

Directions

Preheat the oven to 475˚F. Using a mandoline or a very sharp knife, carefully slice the zucchini into rounds. Roll out your dough of choice and drizzle with a bit of olive oil and salt and pepper. 

Sprinkle the dough with the cheese, then arrange the zucchini on top. Drizzle with olive oil, a pinch of red pepper flakes and salt and pepper. 

Bake for about 9-11 minutes, or until the crust is golden brown.
