Bulgogi BBQ Chicken Tacos with Mango Slaw
Chicken Marinade
1 cup low sodium soy sauce
1/2 cup mirin
1/4 cup brown sugar
1 tablespoon Gochujang (Korean chile paste)
1 tablespoon fresh grated ginger
4 cloves chopped garlic
2 tablespoons sesame oil
2 pounds sliced chicken or pork
In a large bowl, combine all sauce ingredients and mix well. Add chicken or pork and toss well to coat. Cover and place in the fridge for 1 hour or overnight.
Mango Slaw
Add
2 cups cabbage
1 sliced mango
2 chopped charred jalapeño or fresno peppers
1/3 cup chopped cilantro
1 tablespoon low sodium soy sauce
2 teaspoons rice vinegar
2 teaspoons sesame oil
Add cabbage, mango, peppers, and cilantro to a bowl. Toss with soy sauce, rice vinegar and sesame oil.
Cook the chicken in hot skillet until caramelized, spooning the marinade over the chicken as it cooks.
To assemble, add the chicken to a warmed, charred tortilla. Top with slaw, cheese and sesame seeds. EAT.
