ingredients

  • 3 chicken breasts, boneless, skinless, cut in half lengthwise
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 28-ounce can Tuttorosso Diced Tomatoes, drained
  • 2 tablespoons basil, divided
  • 2 tablespoons butter, melted
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon brown sugar
  • 1 cup mozzarella, shredded
  • 1/4 cup parmesan cheese, freshly grated
  • pinch of red pepper flakes, optional

Method

  • Step 1

    Preheat the oven to 425°F.

  • Step 2

    Place a large skillet over medium-high heat. Add olive oil.

  • Step 3

    Pat chicken dry and season both sides with Italian seasoning, salt, and pepper. Add chicken to skillet and cook, 3 minutes per side, until golden brown. Set aside.

  • Step 4

    In a medium bowl, stir together Tuttorosso Diced Tomatoes, 1 tablespoon basil, butter, balsamic vinegar, and brown sugar.

  • Step 5

    Pour tomato mixture into a 3-quart baking dish and nestle chicken into tomatoes.

  • Step 6

    Bake chicken, uncovered, for 14-16 minutes or until cooked through. Remove from the oven and top with mozzarella and parmesan cheese. Bake for an additional 5 minutes, then place under broiler for 1 minute. Cook until golden brown and bubbly.

  • Step 7

    Sprinkle with remaining basil and serve.
